Meet the Chef
Les Goodman
Les Goodman is the Executive Chef at Mable’s, a dynamic new restaurant at Lodge at Marconi in Tomales Bay, California. With more than 25 years of culinary experience, Chef Goodman combines his passion for cooking with his desire to immerse himself in cultures and cuisines from across the globe, culminating in his vision for a distinctive culinary concept in Northern California’s picturesque West Marin County.
In addition to his role at Lodge at Marconi, Chef Goodman is also a part-time Associate Faculty Chef Instructor at Santa Rosa Junior College, where he enjoys using his expertise to teach the next generation of chefs about global influences in modern cuisine. Prior to these roles, Chef Goodman was the Director of Dining Services and Chef Manager at Flik Independent School Dining, where he developed and implemented dining services policies and procedures, led menu development, and oversaw staff members and operations within the department. Before that, Chef Goodman was an Executive Chef and CEO of the beloved Goodman’s Jewish Delicatessen in Sonoma County, Calif. From 2009-2017, Chef Goodman served as an Executive Chef, Consultant, and CEO for Adafina Culinary, where he directed food preparation, estimated food requirements and labor costs, inspected equipment to ensure compliance with industry standards, and supervised a team of kitchen staff — attaining an impressive $100k+ in revenue within the first year. In Chef Goodman’s early career, he progressed through various roles at Gastronomy Management Group in Las Vegas, working his way to Sous Chef at multiple prestigious establishments, including Alize, Andre's, and Mistral, under the mentorship of renowned chef Andre Rochat.
Dedicated to fostering a culture of collaboration and creativity, Chef Goodman is known for his impressive organizational skills and collaborative approach in the kitchen. He is extremely passionate about involving his team in menu development and drawing on their diverse cultural backgrounds to create unique dishes.
Chef Goodman was born and raised in Las Vegas and has also lived in Los Angeles, Northern Colorado, and San Francisco, before settling in Sonoma County over 15 years ago. Chef Goodman holds a BSBA with an emphasis in hospitality management from the University of San Francisco and a certificate in culinary arts, hotel, and restaurant management from the College of Southern Nevada. Outside of the kitchen, Chef enjoys spending time with his family, traveling, exploring the outdoors and gardening.
